The French pastry mille-feuille (“a thousand sheets”) was named so for it’s many, many layers that are “as thin as a whisper”. If you’ve had a Napoleon, you know what they mean! Most often it is used to bolster and combine with other flavors but working in bake shops, a small piece is a real and under-appreciated treat all on it’s own. Here we use simple mille-feuille and butter to lend itself to a thousand experiences while still familiar — as if it is so simple and you have experienced it before while you were dreaming but never so clearly all at once.
