We have a number of people on staff who have souls that really do shine, so translating this poem into chocolate was not a difficult task — there was inspiration all around! While we can’t just knock out the chocolate-eater (that’s you!) with a one two punch of heavy hitting bright flavor (it is our duty to remain well rounded, or at least make sure that our flavors do), we did combine two of our latest bright punchy obsessions. We tried to do it in mediums that mellow each out a little bit, which allows them to play together nicely. By reaching for a caramel we can do that through sugar and milk fat and by reaching for not just a ganache but a custard ganache we can allow the protein and fat from the egg yolks to lend a creamy, buttery companion to accompany the passionfruit while it plays.
