Bittersweet chocolate eating vibes

The Winter Solstice is dark an brings promise of new light. There's probably not a better photo out there from our chocolate-making history to represent that feeling than this one. This is our original shop on Evaline in Hamtramck, Michigan....when we left it for the building we bought and rehabbed down the street (now adoringly referred to as "the Manu" and tbh, it's getting a bit tight here, now, too 😬). We left a million memories here. It's hard to even imagine how much caramel or ganache or how many chocolate shells we made here. We started everything here. We could never have stayed here and grown our small business. It was hard to leave behind but so nice to start fresh.

Is it a coincidence that chocolate is bittersweet? We recently learned that statistically, people eat more chocolate when it's dark out.

Bittersweet chocolate eating vibes? Today kinda feels like our day!

Fun fact - most of our equipment is on wheels so we just wrapped it and wheeled it down the street instead of hiring movers. That was a site to see! Certainly not the weirdest thing that has ever happened in our fair city, but a sight!
